soft and spongy rice idli from RATION rice batter using an idli steamer. This

and determine if it is fermenting properly or not
Ingredients for vada

1 kg Boiled Ration rice ( Pulungal arisi)
·
1 kg Raw Ration rice ( pacha arisi)
·
½ kg Urad dal
·
1 ½ tbs Fenugreek
·
Salt as per requirement

How to make ration rice chicken briyan
1. First do sieving rice through a sieve
2. When sieving like this, the husk and small stone are extracted separately like this.
3. When sieving like this, there will be some black rice. That too must be separated. Otherwise, grind the black rice together to give it a bitter taste
4. There will be a few more large husk stones after getting sieving like this. So again this rice has to be put in the muram and extract(pudaithal). The muram is a simple tool to extract grains from husk and stones. Such extraction is called pudathail.
5. Take both raw rice and boiled rice in a bowl and wash well 5-6 times and then soak for 5 hours. If you soak it after washing it like this, the dirt in the rice will be removed and the idli will be good white. Otherwise if you soak the rice and then you wash. The rice is soaked well with the dirt in the rice and is dull in color
6. Take urad dal and Fenugreek like rice in a bowl, wash well 2-3 times and then soak for 5 hours
7. After soaking for 5 hours, wash the rice and urad dal once again without the stone and dust.
8. Grind the urudal and ration rice separately.
9. First put the urad dal in a grinder and grind. This is because the urad dal stick to the grinder after grinding and cannot be fully picked up the batter. Second, when you grind the rice, it will come together easily.
10. When grinding urad dal and ration rice spray cold water and grind, mani it, do not pour water, olny spray and grind.
11. grind the urad dal batter in a grinder until slightly coarsely.
12. If you take a little grinded batter and put it in water, the batter should float. Floating like that means the batter is grinded in right position. Now the batter can be taken out of the grinder.
13. Next put the ration rice in grinder and grind.
14. Sprinkle this too with cold water and grind little coarsely. Then taken out of the batter in grinder
15. Add the grinded urad dal and ration rice batter together and leave in a bowl for an hour without doing anything
16. After an hour add the required amout of crystal salt and mix well. Beat well with hands and mix. It is only when mixed like this that the idli comes out as spongy and soft. If it is too tight when mixing. Add a little water and mix
17. That’s it now put the lid on another pot. Leave it over the night
18. In the morning the flour will rise to a nice top. Now take the required amount of batter for the idli separately.
19. pour water into an idli pot and let it boil. Pour the idli batter on the idli plate and place it in the idli pan and let it boil
20. After 10 minutes, pierce the idli with a small stick. If the flour does not stick tho the stick when pierced like that, it means that the flour is well steamed.
21. Take out the idli plates and flip it over in another plate. Take the plate on top of the idli.
22.then spray a little water on the cloth and separate the idli from the cloth
23. now ready to eat spogy and soft ration rice idli top of the idil
24. Serve it with sambar and coconut chutney
Note:
v When buying rice at the ration shop a few rice can be
a bit plump to look at. That type of ration rice is the best rice to make in
idli. So use this type of ration rice to make idli
v Sprinkle with cold water while grinding the flour. Only
then will the idli smoothie arrive
v When adding salt to the flour, beat it with your hands
and let it mix
